How to care for a high carbon knife
As a high carbon knife is not stainless it requires more care in order to keep it from rusting or developing a patina. The best way to stop a high carbon knife from rusting it to thoroughly clean and dry the blade after use. It is also beneficial to apply a light coat of oil onto the blade periodically and especially if you are planning on storing the knife for a long time. When washig your knife, do not leave it to dry with the other cutlery as it will sacrifice itself to the stainless steel resulting in the knife rusting quite quickly. Instead, dry it separately and then put it away.
